For 2 portions:
2 teaspoons olive oil
1 tablespoon onion, finely chopped
1/2 red pepper, finely chopped
1 cup fresh mushrooms, sliced
4 eggs
50 gr. Hungarian salami, cut into pieces
50 gr. goat cheese, cut into pieces
Salt and pepper
1. In a bowl, beat the eggs with a whisk.
2. Heat the oil in a cast iron pan. Add the onion, the pepper, the mushrooms and sauté for 1-2 minutes.
3. Lower the heat to medium, add the eggs and cook for 2 minutes. Put the chopped salami and the goat cheese over the eggs. Cover the pan with a suitable lid. Cook for another 3-4 minutes or until the sides start to cook. Continue cooking for another 2-3 minutes over medium heat or until the top of the omelette is cooked. Transfer to a serving plate, sprinkle with salt - pepper and serve.
