Recipe ingredients

Salad

- 1 mixed salad

- Bread

- Olive oil

- Strawberries

- Graviera (Greek cheese)

- Pine nuts

- Balsamic cream

Madeira sauce

- 150gr mushrooms

- 6 pork scallops

- Salt Pepper

- 100gr butter

- 2 tbsp. flour

- 300ml beef broth

- 300ml Madeira Greek wine

- Salt

- 3-4 grains of allspice

Dessert

- 500gr cookies

- 150gr butter

- 400ml sour cream

- 200gr praline

- 200gr couverture chocolate

- 200ml sour cream

- 200gr couverture chocolate


Recipe Directions

Salad

Put the salad in a bowl.

Cut the bread into cubes and toast it in some olive oil.

Put it in the bowl, add the strawberries, the graviera in peels, the pine nuts and the balsamic cream.

Scallops with Madeira sauce

Cut the mushrooms into slices.

Season the scallops on both sides (we use pork chops).

Fry the scalps with some butter (about 2-3 minutes on each side).

Take them out of the pan and sauté the mushrooms in the same pan (if necessary, add some more butter).

Take the mushrooms out of the pan, add the rest of the butter and the flour and roast it.

Add the hot beef broth, the wine (optionally you can use Mayrodafni Greek wine) and mix till the sauce becomes thick.

Optionally add the allspice.

Taste for extra salt and add the mushrooms and scallops.

Leave for 5 minutes and serve.

Chocolate

Cut the cookies and mixed them with the melted butter.

Spread them in a 33cm baking tray with the shape of a heart.

Whisk the cream and after add the praline and the melted couverture chocolate.

Put the cream in the baking tray (on top of the cookies) and leave for 1 hour in the refrigerator.

Melt the couverture chocolate together with the sour cream.

Let it cool for a while and spread it over the dessert.

Put in the fridge for another 1 hour.

Optionally decorate with rosettes of cream that you kept and fruit.
