Baked penne with spinach and cheese by Athena Loizidou

Recipe ingredients

20 gr. olive oil

500 gr. wholemeal penne

1 liter of water

500 gr. oat milk

200 gr. vegan cream

200 gr. vegan cheese, grated

salt and pepper

¼ teaspoon chili powder

2-3 cups spinach leaves, coarsely chopped

40 gr. toast

Recipe Directions

1. Preheat the oven to 190 ° C. We will need a baking tray 22 X 28 X 6 cm.

2. In a pasta pot, heat the water until it boils. Add the pasta and cook, stirring occasionally, for 8 minutes. Then, add the milk, the cream and cook for another 5 minutes.

3. Remove the pot from the heat and put the 2/3 of the cheese. Season with salt and pepper and add the chili and  the spinach.

4. Transfer the mixture to the pan and sprinkle with the remaining cheese and the toast. Finally, sprinkle with oil.

5. Bake until the toast is golden brown, about 20 minutes. Leave it to cool for 5 minutes and serve.
