Baked sweet potatoes with vegan mayonnaise, olive paste and black truffle by Athena Loizidou

Recipe ingredients

750 gr. (about 3 medium) sweet potatoes, cut into degrees

10 gr. olive oil

Salt and  pepper


For vegan olive and black truffle mayonnaise:

250 gr. olive oil

125 gr. soy milk

2 tablespoons apple cider vinegar

Salt and pepper

3 teaspoons olive paste with black truffle


Recipe Directions

1. To make the sweet potatoes: In a saucepan, heat water until it boils and add the sweet potatoes. Boil them for about 5 minutes or until they soften a little. Drain and place in a pan. Spread the sweet potatoes with oil, salt and pepper. Bake in a preheated oven at 250 °C for 10-15 minutes.

2. For the mayonnaise: Pour the olive oil, the soy milk, the vinegar, the salt and the pepper in a bowl. Beat with a hand blender until you have a combined mixture. Pour the olive paste with truffle in the bowl and mix. Transfer to a bowl.

3. To serve, place the sweet potatoes on a plate and place the truffle mayonnaise in the center for a dip. Enjoy!
