For 4 portions:
650 gr. beef, chopped into cubes
Salt and pepper
1 tablespoon extra virgin olive oil
1 onion, peeled and finely chopped
3 carrots, peeled and chopped
50 gr. apple cider vinegar
200 gr. water, in which we dissolve 1 cube of beef broth
1 tablespoon balsamic vinegar
2 teaspoons tomato paste
1 tablespoon brown sugar
2 sticks of fresh thyme
2 leaves of dried bay
200 gr. fresh plums chopped into pieces
1 stick of fresh rosemary
200 gr. rice cooked according to the instructions on the package
1. Preheat the oven to 160 ° C.
2. Add salt and pepper to the beef. Heat the olive oil in a large cast iron pan and fry the meat on both sides until the meat is browned on the outside.
3. Put the beef in a fireproof pan. Add the onion and carrots to the pan, cook for 2-3 minutes. Put the vegetables in the fireproof pan, add the apple cider vinegar, the water with the broth, the balsamic vinegar, the tomato paste, the brown sugar, the thyme, the leaves of bay, the plums and the rosemary. Put salt and pepper, mix to homogenize. Cover the fireproof pan and transfer to the oven. Cook the covered food for 3 hours. When the baking is over, remove the fireproof pan from the oven. Let the food covered for 10 more minutes.
4. Make the rice according to the instructions on the package. We serve the food with our rice.
