For 8 portions:
1.4 kg of beef, cut into cubes
Salt and pepper
50 gr. olive oil
1 small red onion, cut into slices
½ teaspoon garlic, melted
1 teaspoon turmeric
½ teaspoon bukovo
2 teaspoon lemon zest and 2 tablespoons lemon juice
600 gr. water
1 cube beef broth
400 gr. (1 package) chopped tomatoes
200 gr. cooked chickpeas
60 gr. spinach leaves
¼ glass of fresh coriander, coarsely chopped
¼ glass of parsley leaves, coarsely chopped
800 gr. cooked basmati rice to serve
To serve:
40 gr. feta, cut into cubes
Fresh mint leaves
1. Preheat the oven to 160 ° C. Season the meat with salt and pepper.
2. Place a medium-sized roaster on high heat and heat the olive oil. Add the meat, the onion, the garlic and fry just to cook the meat on the outside. Add the turmeric, the boukovo, the lemon zest and cook for about 1 minute.
3. Add the water, the broth, the tomatoes, the lemon juice and season with salt and pepper. Let the mixture boils for 1 minute. Cover our roaster with its lid and transfer to the oven. Cook for 3 hours or until our meat is very soft.
4. Remove the roaster from the oven and place it on low heat. Add the chickpeas, the spinach, the coriander, the parsley, and boil for 1 minute. Simmer for 5 minutes or until the spinach is withered and the stew is very fragrant.
5. To serve, divide the rice into bowls and add the stew. Put feta cubes and herbs on top.
