For 3 portions:
250 gr. spaghetti linguine
40 gr. salted butter
1 teaspoon pepper
30 gr. pecorino cheese, grated
50 gr. parmesan cheese, grated
To serve:
Grated Parmesan
Extra pepper
1. In a large pot put salted water and boil it. Add the pasta and cook 2 minutes less than the instructions on the package. Hold a glass of pasta water and drain the spaghetti.
2. At the same time, place a wok on high heat and melt half of the butter. Add the pepper and heat to flavor the butter with the pepper. Add 2-3 tablespoons of the pasta water.
3. Add the cooked spaghetti to the wok, the rest of the butter and stir for 1-2 minutes.
4. Lower the heat, add the pecorino and stir to melt. If needed, add 1-2 tablespoons of pasta water.
5. Remove the wok from the heat, add half of the parmesan and stir until melted. Add the other half and stir until incorporated into the sauce. Serve the spaghetti with extra parmesan and pepper.
