200 gr. flour for all purposes
200 gr. butter, cut into pieces
150 gr. powdered sugar
2 medium eggs, beaten
A few drops of almond essence
60 gr. milk
100 gr. whitened almonds, finely chopped
150 gr. “Orange & Ginger” jam
25 gr. whitened almonds, sliced
1. Preheat the oven to 160 °C, in air. We will need a non-stick pan 28 X 10 cm. If your pan is not non-stick, we butter it and spread its base with greaseproof paper.
2. Put the flour, the butter, the sugar, the eggs, the almond essence and the milk in the mixer bucket, beat for 2-3 minutes until the mixture is fluffy. Finally, mix in the almonds.
3. Pour half of the cake mixture into the pan and then pour the jam evenly on top. Cover with the rest of the cake mixture. Then sprinkle the almonds on top of the cake and bake for 1 hour. Let the cake stand in the pan for 20-30 minutes to cool before serving.
