400 gr. wholemeal flour
1 teaspoon baking soda
zest of 1 large orange
½ teaspoon salt
30 ml white vinegar
450 gr. almond milk
120 gr. olive oil
300 gr. coconut sugar or brown sugar
½ teaspoon almond extract
80 gr. coarsely chopped almonds + extra for the top of the cake
1. Preheat the oven to 160 ° C.
2. In a bowl, add the flour, the baking soda, the orange peel, the salt, the vinegar, the almond milk, the olive oil, the sugar and the almond extract. Stir the mixture with a spatula until our ingredients are combined.
3. Using the spatula again, transfer the mixture to the prepared pan. Transfer to the oven and bake for about 1 hour. Let the cake cool.
4. Place the cake on a plate, cut into 10 portions, sprinkle with the extra almonds and enjoy!
