Chocolate cookies with espresso, salt and chocolate icing by Athena Loizidou

Recipe ingredients

For the icing:

20 gr. cocoa powder

90 gr. milk

170 gr. chopped dark chocolate

1 teaspoon margarine

teaspoon vanilla extract


For cookies:

90 gr. margarine

100 gr. brown sugar

1 egg

teaspoon vanilla extract

220 gr. flour for all uses

1 teaspoon baking powder

teaspoon salt

1 tablespoon instant coffee

150 gr. pieces of dark chocolate or chocolate chips

Recipe Directions

1. To make the chocolate glaze: Heat the milk in a small saucepan. Add the cocoa, the milk, the chocolate chips, the margarine and the vanilla. Mix until the chocolate melts and you have a smooth mixture. Let it to cool.

2. To make cookies: Preheat the oven to 200°C. Put in the pan a piece of baking paper. In the bucket of the mixer, add the margarine, the brown sugar, the egg, the vanilla, the flour, the baking powder, the salt and beat until our ingredients are combined. Transfer the dough to a bowl and mix in the chocolate pieces.

3. Using an ice cream scoop, make half balls of the dough. Place them in the pan. Bake for 11 to 13 minutes or until change colour. 

4. Let them cool for 5 minutes in the pan and then spread each cookie with a thick layer of chocolate icing. We can enjoy them with vanilla ice cream, if we want!
