Cookies with olive oil from Smyrna by Athena Loizidou

Recipe ingredients

For 25 - 27 cookies:

380 gr. flour

100 gr. olive oil

50 gr. water

100 gr. powdered sugar

1 teaspoon baking soda

2 eggs

zest of 1 orange

1 teaspoon ground cinnamon

1 teaspoon vanilla

Recipe Directions

1. Add the flour, the olive oil, the powdered sugar, the baking soda, the eggs, the orange zest, the cinnamon and the vanilla to the food processor and beat until the mixture is combined.

2. Transfer the mixture to a bowl and take pieces of dough around 30 gr. each. Shape the dough pieces into balls.

3. Preheat the oven to 170 ° C. Place the cookies in a non-stick pan.

4. Bake the cookies for about 35 minutes. When they are ready, leave them in the oven with the oven door open until they cool completely. This will make the cookies more crunchy.
