For 7 large cookies:
60 gr. olive oil
90 gr. tahini
1 egg
1 teaspoon vanilla extract
220 gr. oats
135 gr. raw sugar (raw coconut sugar)
1 teaspoon baking powder
½ teaspoon salt
60 gr. dark chocolate chips
60 gr. coarsely chopped roasted almonds
1. Preheat the oven to 200 °C. Put a piece of baking paper in the pan.
2. Add the olive oil, the tahini, the egg, the vanilla, the oats, the raw coconut sugar, the baking powder and the salt to the bucket of the mixer. Beat until the dough is homogenous. Transfer the mixture to a bowl and add the chocolate and the almond pieces by hand.
3. Using a large scoop of ice cream, make half balls of dough. Place them in the pan. Bake for 10 minutes or until cookies change colour. Let them cool for 5 minutes in the pan and then enjoy them hot!
