800 gr. medium-sized potatoes
30 gr. olive oil

For the bacon sauce:
150 gr. (1 package) slices of bacon, cut into pieces
20 gr. olive oil
2 tablespoons white vinegar
2 teaspoons honey

1. Preheat the oven to 200 ° C. Put the potatoes in a saucepan and cover them with salted water. Simmer for 30 minutes until the potatoes are soft. Strain the potatoes and transfer them to a baking sheet.
2. At the same time, make the bacon sauce. In a cast iron pan over medium to high heat, cook the bacon until crispy. Leave the pan to cool slightly and then add the olive oil, the vinegar, the honey, a pinch of salt and pepper.
3. Let the potatoes cool and then using the bottom of a large cup break each potato lightly. Drizzle the potatoes with the olive oil, sprinkle with the onion and the garlic and season with salt and pepper. Transfer to the oven and bake the potatoes for 30-35 minutes.
4. To serve, transfer the potatoes to a serving platter and sprinkle with the hot bacon sauce. Serve with yogurt and salt flakes.
