300 grams strong flour, for pizza
7 grams dry yeast
100 grams warm water

20 grams white wine

We will use the special Nava pan that can be used in the oven. Preheat the oven to 200 degrees C. Grease and flour the pan.
Dissolve the yeast in the water and leave it to activate for a few minutes. In a large bowl put the flour and make a puddle in the middle. Add the yeast and all the other liquids and knead. The dough must be firm but also quite moist. Transfer to the pan, cover and leave to rise for ten minutes.
Prepare the sauce. Make a pulp of cherry tomatoes in the blender. Add sugar, olive oil, parmesan, salt and pepper and mix.
Spread the sauce on the dough. Add the ingredients you prefer. Cover with a lid and bake for about 15 minutes, until the cheeses are melted. Add fresh herbs at the end.
