Recipe ingredients

170 gr. margarine

165 gr. brown sugar

2 teaspoons vanilla

3 large eggs, at room temperature

240 gr. apple juice

320 gr. flour for all purposes

2 teaspoons baking powder

2 teaspoons cinnamon

½ teaspoons nutmeg

½ teaspoons salt

For Apple Strussel:

100 gr. flour for all purposes

110 gr. brown sugar

1 teaspoon cinnamon

110 gr. margarine

2 Pink Lady apples, peeled and cut into pieces

100 gr. pecans, coarsely chopped

120 gr. maple syrup

1 teaspoon vanilla extract

1 large egg

For the overlay:

Powdered sugar

Cinnamon


Recipe Directions

1. Preheat the oven to 160 °C. Grease a 1.5L pan with margarine, making sure to fit well in all corners.

2. In the mixer bowl, beat together the margarine, the brown sugar and the vanilla until fluffy, about 2 minutes. Add the eggs one by one until they are fully incorporated. Add the apple juice, beating. Add the flour, the baking powder, the cinnamon, the nutmeg, the salt and mix on low speed until the ingredients are homogeneous. Be careful not to beat the mixture too much.

3. To make the strussel: In a medium bowl, mix the flour, the brown sugar and the cinnamon. Add the margarine and with your fingers mix the margarine in the flour until you have a mixture like crumbs. Stir in the apples and the pecans.

4. In a small bowl, whisk together the maple syrup, the vanilla and the egg.

5. To bake the cake: Pour half of the mixture into the prepared pan. Sprinkle 3/4 of the strussel over the mixture and then sprinkle the maple mixture. Pour over the rest of the mixture and finally pour over the rest of the strussel and spread carefully in a uniform layer. Sprinkle with the remaining strudel. Transfer to the oven and bake for 55-60 minutes or until a toothpick dipped in the center comes out clean. If the top of the cake bakes very quickly, cover with foil for the last 15 minutes of baking.

6. Allow the cake to cool very well and then turn it over on a plate. Sprinkle with powdered sugar and cinnamon. Serve the cake at room temperature.
