450 gr. flour for all purposes
3 teaspoons baking powder
300 ml fresh orange juice
150 ml of water
50 ml olive oil
45 gr. sugar
1 1/2 teaspoon salt
300 gr. black olives, drained
1 glass of fresh coriander leaves, coarsely chopped
1. Preheat the oven to 170°C and put a piece of baking paper in a rectangular cake pan.
2. In a bowl, add the flour, the baking powder, the fresh orange juice, the water, the olive oil, the sugar, the salt and mix well with a whisk. Finally, add the olives and the coriander to the mixture. Mix well.
3. Transfer the mixture to the pan and bake for 50 minutes to 1 hour.
4. Let the elioti cool a bit and remove it from the pan. Cut it into slices and serve.
