30 gr. salted butter
1 large onion, cut into thin slices
Salt and black pepper
100 gr. Apple juice
Fresh thyme leaves
Fresh sage leaves
1 pinch of red pepper flakes
8 slices of traditional halloumi
4 slices of loaf bread
2 tablespoons plum or fig jam
2 tablespoons olive oil
1. Melt the butter in a pan over medium to high heat. Add the onions and cook for 3 minutes until soft. Add the apple juice, season with salt and pepper and continue cooking for another 5 minutes, until the water evaporates and the onions caramelize. Add the thyme, sage and crushed red pepper, cook for another minute. Remove from the heat.
2. Heat another large cast iron skillet over medium heat.
3. Smear the outside and inside of each slice of bread with olive oil. Inside the bread pieces, spread the halloumi, the onion and the jam evenly. Add the top piece of bread.
4. Place the sandwiches in the pan and cook until they turn red on both sides, about 3-5 minutes per side. Serve immediately, garnishing with fresh sage and thyme leaves.
