80 gr. coconut powder
340 gr. flour

320 ml oat milk

For the icing:
120 gr. whipping cream
80 gr. cream cheese
80 gr. powdered sugar
Zest of 1 lemon
To serve:
Coconut flakes
Zest of 1 lime
1. Preheat the oven to 160 ° C.
2. In a bowl, add the coconut powder, the flour, the baking powder, the oat milk, the olive oil, the sugar, the eggs, the vanilla, the matcha powder and the lemon peel. Stir the mixture with a whisk until the ingredients are combined.
3. Using a spatula, transfer the mixture to the prepared loaf pan and then to the oven. Bake for about 1 hour. Let the cake cool.
4. Meanwhile, make the icing. In a bowl, mix the whipping cream, the cream cheese, the powdered sugar and the lemon zest.
5. Place the cake on a plate and spread on top the icing using an icing spatula. Cut into slices and enjoy!
