For the dough: (for 8 medium mince pies)
180 gr. flour
1/4 teaspoon of salt
100 gr. margarine
30 gr. sugar
1 egg
1 teaspoon lemon zest
For the filling:
250 gr. mince meat
1. Put all the ingredients for the dough into a bowl and knead for a few minutes until you have a dough.
2. With a rolling pin and some more flour, roll out the dough into a sheet that is 3 mm thick. Cut the dough into circles with a cup (mug). We press each circle in 8 baking cups (for cup cakes) to make the bases of the mince pies.
3. Fill each base with 2 teaspoons of mince meat.
4. Open the rest of the dough and cut into a star shape or other shape with our cookie cutters. With the stars or other shapes, we make the top of the mince pies. Place them on top of the mince meat. We put our mince pies in a pan.
