For 2 servings as main food:
800 gr. peeled mussels
40 gr. olive oil
1 small onion, finely chopped
1 teaspoon melted garlic
a few fresh thyme leaves
250 gr. white dry wine
To serve:
lemon juice
chopped parsley
1. Heat the oil in a large and shallow saucepan over medium to high heat. Add the onion and the garlic and let them cook for 1-2 minutes. Add the oregano leaves and the white wine to the pot and let the mixture boil.
2. Add the mussels and cover the pot. After three minutes, shake the pot lightly to mix the mussels gently. Cook for another 3 minutes and remove the mussels from the heat. Discard the mussels that are closed.
3. Put on a serving platter, add lemon juice and sprinkle with parsley. Serve immediately with pieces of baguette, to dip in the sauce, and enjoy!
