Pancakes with white chocolate and strawberries | Stavros Varthalitis

Recipe ingredients

2 egg yolks

20 gr. 3.5% milk

10 gr. sunflower oil

30 gr. all-purpose flour 

3 egg whites

50 gr. sugar

1 teaspoon white vinegar

100 gr. white chocolate

60 gr. hazelnuts

Strawberries or raspberries

Recipe Directions

1. First, we prepare the meringue. In the bowl of the mixer, beat the egg whites with the sugar and the vinegar to create a tight meringue.

2. In another bowl add the egg yolks, the milk, the sunflower oil and mix using a whisk. Then, add the flour to the mixture and mix again.

3. Combine the mixture with the meringue, stirring lightly to maintain the volume of the meringue.

4. Heat a pan over medium heat and add a small piece of butter to melt.

5. With a spoon put the mixture in the pan forming small pancakes. Cover with a lid and let the pancakes bake on low heat so they do not burn.

6. When they are caramelized from the one side, flip them over, add a little water and cover again the pan with the lid. 

7. Serve with melted white chocolate, strawberry pieces and coarsely chopped hazelnuts.
