5 slices of bacon, cut into pieces
60 gr. butter at room temperature
4 slices of bread with yeast
1 cup grated cheese
1 peach, cut into thin slices

1. First fry the bacon in a cast iron pan, turning it 1-2 times until it is crispy.
2. To make the butter with bacon, in a small bowl mix half of the butter with the bacon.
3. Reheat your pan over medium to high heat. Spread the inside of each piece of bread with butter and bacon. Spread the cheese and the peach slices evenly. Sprinkle with honey on top. Add the top piece of bread. Butter the outside of the sandwich with the remaining butter.
4. Place the sandwiches in the pan and cook until the cheese is melted and the sandwiches are crispy. Serve each sandwich with a little more honey and fresh thyme leaves, if desired.
