Pasta flora with apricot jam by Athena Loizidou

Recipe ingredients

350 gr. flour for all purposes

175 gr. unsalted butter, cut into small pieces

70 gr. powdered sugar

1 large egg

2 tablespoons water

560 gr. apricot jam mixed with 100 ml of water to dilute

Recipe Directions

1. Preheat the oven to 180 ° C.

2. In the mixer, beat the flour, the butter, the sugar, the egg and the water until you have a ball of soft dough.

3. On a working surface, roll out the dough into a round piece using a rolling pin. Apply 3/4 of the dough to the base of the pan. Place a piece of baking paper on the base and put beans or special baking beans on top. In this way the base will not swell too much. Bake for 15 minutes, take it out of the oven and let it cool for 10 minutes without the beans. Spread the jam on the base.

4. Place a piece of baking paper on a working surface and roll out the rest of the dough with the rolling pin. With a good knife, cut long narrow strips of dough and place them vertically and horizontally on the top to give the checkered shape to Pasta Flora.

5. Put the pan in the oven and bake for another 30-40 minutes. Leave it to cool and serve.
