For the zucchini:
4 small zucchini with blossoms
¼ cup olive oil
For the wine sauce:
1 onion
1 sc. garlic
¼ cup olive oil
¼ cup white wine
100 gr. smoked pancetta (cold cuts)
Fresh mint
Pepper
Salt
250 gr. penne or other pasta
Wash and cut the zucchini into thin slices, then put them on a towel.
Heat the olive oil in a fry pan and fry the zucchini for a few minutes until change color.
Take them out with a wide skimmer on a plate and leave them aside.
Boil the pasta in salted water for 2' less than the indicated time on the package.
For the sauce:
Cut the onion into thin slices.
Cut the garlic.
Put in a deep pan 2 tablespoons olive oil, then sauté the onion for 3-4 '.
Add the cut garlic and sauté for 1 '.
Add the chopped smoked pancetta and sauté for 2 '.
Put the wine and let the alcohol evaporate a little.
Using a wide skimmer, put the penne and add them to the fry pan with the wine sauce.
Add the fried zucchini and the grated cheese.
Season with a salt and pepper.
Add the cut mint.
Put a little hot water from the boiled pasta into the sauce to dilute.
Mix the ingredients and serve in deep plates the pasta with zucchini and white sauce.
