For the shrimp with lemon mustard sauce and ouzo:
We keep the shrimp with the shell.
Peel the finocchio and cut it into thin slices.
Cut the papper.
Heat a large pan over high heat.
Add the olive oil and sauté the finocchio on high heat to caramelize. In this way the finocchio will give us sweetness and special aroma.
Season with salt and pepper to the shrimp and sprinkle with olive oil.
Add the shrimp to the caramelized finocchio and sauté for 1' on each side. Once the shrimp change color, they are ready.
Add the hot papper and the ouzo and let the alcohol evaporate completely.
Lower the heat.
Mix the mustard with the lemon juice in a bowl.
Add the shrimp.
Stir the shrimp with the mustard and lemon sauce.
Once the sauce has boiled, remove the pan from the heat.
Add a little water to the mustard sauce if you want a thinner and juicy sauce.
Sprinkle with chopped finocchio tassels.
Serve the shrimp with the finocchio and the lemon sauce with a ouzo and ice cubes or a glass of white wine.
