For the rice:
10 gr. olive oil
1 tablespoon chopped onion
¼ teaspoon melted garlic
1 teaspoon ginger, grated
½ green pepper, cut into strips
½ red pepper, cut into strips
200 gr. rice
500 gr. water
salt and pepper
1 teaspoon curry
½ a teaspoon of turmeric
½ teaspoon garam masala
For the beans:
10 gr. olive oil
1 tablespoon chopped onion
¼ teaspoon melted garlic
1 teaspoon ginger, grated
250 gr. cooked red beans
1. Prepare the rice. Heat the oil in a saucepan over high heat. Fry the onion, the garlic, the ginger and the peppers for 1-2 minutes. Add the rice and cook together for another 1-2 minutes. Add water, salt, pepper, curry, turmeric and garam masala. Stir and let the mixture boil for 1-2 minutes. Lower the heat, cover the pot and simmer for 20΄.
2. Meanwhile, prepare the beans. Heat the oil in a wok over medium heat and fry the onion, the garlic and the ginger for 1-2 minutes. Add the beans and cook together for 3-4 minutes, stirring.
3. Serve in a bowl, with the rice as a base, put the beans on top and decorate with mint leaves and coriander.
