For the salad:
50 gr. walnut kernels
6 glasses of mixed salads such as arugula, spinach, green and red lolo
2 small oranges, sliced
½ pink grapefruit, sliced
1 avocado, sliced
80 gr. feta in cubes
For the orange vinaigrette:
40 gr. olive oil
40 gr. fresh orange juice
40 gr. raw tahini
10 gr. apple cider vinegar
50 gr. honey
salt and black pepper
1. To make the vinaigrette: Combine all the ingredients in bowl and mix them with a whisk.
2. Place half the greens in a large salad bowl and add about half the vinaigrette. Then, add orange slices, grapefruit slices, avocado slices, cheese and nuts. Repeat, put the vinaigrette and serve!
