5 glasses of rocket leaves
20 gr. walnuts, coarsely chopped
6 sun-dried tomatoes, drained and cut into pieces
60 gr. crust sheet (each sheet cut into four pieces)
120 gr. cheese feta (cut into cubes of 30 gr.)
Olive oil
For the sauce:
50 gr. olive oil
60 gr. honey
45 gr. apple cider vinegar
Salt and pepper
1. First we make the "packages" of crust with feta. Take a piece of crust sheet and grease both sides with olive oil. Wrap a piece of feta inside and fold it to make a small package. Repeat with the rest of the crust.
2. Preheat the oven to 200oC and put the packages in a baking tray. Bake for ten minutes until the crust changes colour.
3. Make the salad's sauce, beating all the ingredients in a small bowl, with a whisk.
4. Put the rocket salad in a bowl and mix it with the sauce. Put the salad on a serving platter and sprinkle with walnuts and sun-dried tomatoes. Place the packages on top of the salad and serve immediately.
