Salad with salami parizaki by Athena Loizidou

Recipe ingredients

300 gr. cherry tomatoes of different colors, cut in half

25 gr. capers, drained

15 gr. mixed parsley and coriander leaves, finely chopped

15 gr. Cyprus black olives, seedless

30 gr. bun bread, toasted and diced

30 gr. halloumi in cubes

50 gr. parizaki, in cubes

20 mint leaves


For the sauce:

30 gr. olive oil

5 gr. red vinegar

10 gr. lemon juice

¼ tea spoon dry mint

½ tea spoon salt

¼ tea spoon pepper


Recipe Directions

1. First we make the sauce, mixing all its ingredients in a small bowl. Mix all the salad ingredients in another large bowl. Finally, stir the sauce into the salad. Serve immediately.
