200 gr. strained yogurt 2%
50 gr. olive oil
1 medium egg
1 pinch of white crystalline sugar
Salt and pepper
100 gr. all-purpose flour
Fresh thyme or oregano
1 teaspoon baking powder
1 teaspoon corn flour
100 gr. sliced ham
120 gr. mozzarella
To serve:
Salad of your choice
Cherry tomatoes
Olive oil
Oregano
Salt and pepper
Fried egg
1) In a bowl, mix the yogurt, the sugar, the salt, the pepper, the olive oil, the egg, the baking powder and the corn flour. Then add the flour, the mozzarella, the ham cut into irregular pieces, the thyme and the oregano.
2) Spread the pan for the pancakes with a little olive oil and put 1 tablespoon of the mixture in each cavities. Press the mixture to give a nice shape to the pancake. Bake for 2.5 minutes on each side.
3) Fry an egg and serve it with the pancakes adding a salad of your choice.
