1 tablespoon olive oil
4 large eggs
150 gr. cottage cheese
1/2 ripe avocado, sliced

1. Heat a cast iron pan over medium heat and add the oil.
2. Break 4 eggs in a bowl and beat them lightly with a whisk. Put the eggs in the hot pan. Using a silicone spatula, move the eggs quickly and evenly around the pan. Continue to move the eggs constantly during cooking, pushing them around the pan and paying attention to the points that are cooked quickly. Continue to move and push the eggs around the pan until they start to coagulate. As they start to coagulate, add the cottage cheese and start pushing the eggs together into a piece, continuing until they thicken according to our preference. This usually takes 3-4 minutes from start to finish.
3. Transfer the eggs to a freshly toasted piece of toast.
4. Garnish with salt, pepper, avocado slices, thyme, other fresh herbs of your choice and chili.
