Spicy noodles with chicken by Athena Loizidou

Recipe ingredients

70 gr. soy sauce

2 tablespoons brown sugar

50 gr. of water

10 gr. of sesame oil

340 gr. minced chicken

salt and pepper

2 tablespoons chopped onion

220 gr. button mushrooms, sliced

1 tablespoon fresh ginger, grated

1/4 teaspoon garlic, grated

10 gr. peanuts, coarsely chopped

1-2 teaspoons bukovo

250 gr. chinese noodles

5 gr. Sesame seeds

140 gr. chopped cabbage

coriander leaves to serve

Recipe Directions

1. In a bowl, mix the soy sauce, the sugar and the water.

2. Heat the sesame oil in a wok and fry the minced chicken. Add salt and pepper and cook about 5 minutes.

3. Add the onion, the mushrooms, the ginger, the garlic and cook for another 2-3 minutes. Slowly add 1/2 of the soy sauce mixture. Add the pistachios and mix in the boukovo. Add the rest of the soy sauce mixture, the cabbage and the sesame. Simmer the mixture.

4. Meanwhile, cook the noodles according to the packaging instructions. Strain and set aside.

5. Stir in the noodles, remove from the heat. Serve the noodles hot, with coriander leaves in a large bowl.
