Sweet potatoes with maple syrup by Athena Loizidou

Recipe ingredients

1 kg (3 medium) sweet potatoes, cut in half and lengthwise

20 gr. extra virgin olive oil

1/2 teaspoon of salt

60 gr. maple syrup Maple Joe Bio

20 gr. salted butter

1/2 teaspoon of boukovo

Extra salt and pepper

Recipe Directions

1. Preheat the oven to 220 ° C.

2. In a bowl, put the chopped sweet potatoes with the olive oil, the salt and mix.

3. In a pan with cooking paper, place the potatoes with the cut side down. Transfer to the oven and bake for 25 minutes until the potatoes are tender.

4. In a small bowl, mix the maple syrup with the butter and the boukovo. Turn the potatoes over, put on them the mixture, return to the oven and bake until the potatoes are caramelized, about 15 extra minutes. Check the salt, the pepper and serve.
