300 gr. flour for all uses
40 gr. cocoa powder
1 ½ teaspoon baking powder
1 teaspoon salt
3 tablespoon apple cider vinegar
150 gr oat milk
120 gr. melted coconut oil (you can also use canola or olive oil)
2 teaspoons vanilla extract
160 gr. brown sugar (or, if desired, add organic coconut sugar)
For the chocolate icing:
200 gr. chopped dark chocolate
100 gr. oat milk
3 tablespoons maple syrup
1. Preheat the oven to 160 ° C.
2. In a large bowl, mix the flour, the cocoa, the baking powder and the salt. Add the apple cider vinegar, the oat milk, the melted coconut oil (or oil of your choice),the vanilla, the sugar and beat with a spatula.
3. Put the mixture in a cake mould. Bake for 40 minutes or until a toothpick placed in the center of the cake comes out clean.
4. For the icing: Mix the milk and maple syrup together in a small saucepan and bring to a boil. Add the chocolate and mix until all the chocolate has melted. Let it to cool, mixing every 15 minutes or until the chocolate thickens into a glaze that spreads easily.
5. Place the cake on a cake base or on a plate. Spread the creamy filling over the cake with a special icing spatula.
