220 gr. coconut milk
1 tablespoon white vinegar
1 teaspoon liquid vanilla
130 gr. flour for all purposes
2 teaspoons baking powder
2 pinches of salt
15 gr. coconut sugar or another sweetener
coconut butter or oil for the pan
Put the milk, the vinegar, the vanilla, the salt in a bowl and mix.
In another bowl, sift the flour with the baking powder and add the sugar.
Mix them well with a spoon and make a "gap" in the center.
Add the liquid ingredients and with a spoon mix the mixture for the vegan pancakes, until it is homogenous.
Cover the mixture with a piece of wrapping film and let it rest for 30′.
Heat a non-stick pancake pan over medium-low heat and grease it with olive oil or coconut butter for more aroma.
Add in the pancake pan 1/4 cup. mixture for every pancake.
Bake for 2 minutes on one side, until the edges are cooked.
Turn over and bake for about one and a half minutes on the other side.
Place the vegan pancakes in a plate and garnish immediately with maple syrup and fruits or with vegan chocolate.
