White pizza with mushrooms and caramelized onions by Athena Loizidou

Recipe ingredients

30 gr. olive oil

1 large onion, cut into slices

Salt and pepper

80 gr. white wine

1 tablespoon chopped fresh sage

2 teaspoons chopped fresh rosemary

1 pinch of bukovo

250 gr. mixed mushrooms, sliced

¼ teaspoon garlic, melted

2 tablespoons balsamic vinegar

300 gr. ready pizza base

A little crumb of Anaris

200 gr. (1 package) 4 grated cheeses


Recipe Directions

1. Preheat the oven to 200 °C and line a large baking tray with greaseproof paper.

2. Heat the olive oil in a large pan over medium to high heat. Add the onions and cook for 3 minutes until soft. Add the mushrooms, the garlic, the sage, the chopped rosemary and the  boukovo and cook for another minute. Remove from the heat, add the balsamic vinegar.

3. In the prepared pan, place the base of the pizza.

4. Pour over a little olive oil and a little crumb. Spread the ½ quantity of the 4 cheeses on top. Add the onions and mushrooms and finally the remaining 4 cheeses.

5. Transfer to the oven and bake for 15-20 minutes or until the dough is cooked through and the cheese is melted.
