1 seabream, 500 gr., cleaned of scales and offal
Salt - Pepper
4 tablepoons olive oil, for frying
1 large onion, dried, cut into slices
1/4 glass of fresh ginger, cut into sticks
1 teaspoon garlic, melted
1 tablespoon granulated sugar
200 gr. white wine
20 gr. soy sauce
1 hot red pepper without spores, finely chopped
A few fresh basil leaves
1. Rinse and dry the fish. Make 3 incisions on each side of the skin and rub with salt and pepper.
2. In a large cast iron pan, heat the olive oil over medium to high heat. Place the fish in the pan and fry it for 3-4 minutes on each side.
3. Add the onions, the ginger, the garlic and the sugar to the pan and stir for 2-3 minutes.
4. Add the wine and leave it for 2-3 minutes until it evaporates and then add the soy sauce and cook for another 1-2 minutes.
5. Once the fish is ready, transfer it to a serving platter and pour over the contents of the pan. Add the chopped pepper and the basil leaves and serve immediately.
