Asian brioche rolls with chicken by Athena Loizidou

Recipe ingredients

For the chicken:

350 gr. chicken breast fillet

15 gr. brown sugar

¼ teaspoon chili powder

1 teaspoon salt

10 gr. olive oil

80 gr. mayonnaise

1 pinch of chili powder

2 teaspoons sugar

½ teaspoon salt


To serve:

3 brioche buns (around 60 gr. each)

100 gr. wagame salad 

1 hot red pepper without seeds,  finely chopped

2 tablespoons chopped onion

Recipe Directions

1. Prepare the chicken first. In a bowl, add the chicken fillets, the sugar, the chili, the salt and the olive oil. Mix by massaging the fillets with the spices.

2. Place a cast iron pan on high heat and heat it. Add the chicken fillets and lower the heat. Cover the pan and cook the chicken for about 7-8 minutes. During the cooking we should open the pan to evaporate the water.

3. Put the cooked chicken on a cutting board and cut it finely.

4. Put the chopped chicken in a bowl and add the mayonnaise, the chili powder, the sugar and the salt. Mix to homogenize.

5. Put the buns in the oven to heat them for 3-4 minutes. Cut the top of each bun in the center, being careful not to cut it all. Put in each bun the wagame salad. With a spoon, add the chicken mixture.

6. Serve each roll with the chopped pepper, the onion and a little roasted sesame. If we want, we also serve with chips.

HOT TIP: For more classic rolls, you can make this recipe with chopped lobster, crab or shrimp.
