For the red mullets:
500 gr. red mullets, cleaned and filleted
20 gr. olive oil, to fry the red mullets
salt - pepper
For the cous cous:
250 gr. couscous
450 gr. water
50 gr. white wine
1 vegetable broth, crushed
lemon peel
salt - pepper
To serve:
1 tablespoon caper
2 tablespoon parsley, finely chopped
cherry tomatoes
1. Wash and wipe the red mullet fillets.
2. Put the couscous in a bowl, pour in the water, wine, the broth, the lemon zest, the salt and the pepper, cover with cling film and set aside to rise and be ready.
3. At the same time put the oil in a pan and heat it. Fry the red mullets over medium to high heat for 1-2 minutes on each side.
4. Serve the red mullet fillets with the couscous and add the capers, the chopped parsley and the cherry tomatoes.
